Rolled Oats Cranberries Chewy Cookies

Is this the first cookie recipe me and wifey sharing with you dear readers? Last Saturday, wifey impressed me with her version of healthy cookies and I must say it is a winner in my book. The process is simple and the ingredient basic. Total cooking time (plus cleaning) is about 30minutes. Excuses to binge on high-sugar and high calories snacks should be eliminated with these cookies.

Here is how:
Ingredient (make about 15 two inches diameter cookies)
1.5 cups all purpose flour (we use organic flour)
2 cups rolled oats (did i see you roll your eyes)
1 teaspoon ginger powder (or cinnamon, nutmeg or anything) - this is optional, it is up to you to use or otherwise.
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Some brown sugar (we use like 1/5 of a cup)
1/2 cup of cranberries ( or raisins, depending on what you have)
1 large egg, beaten lightly (we use one AA sized)
1/2 cup of corn oil (or vegetable oil, we should had used grapeseed oil)
4 tablespoon full cream milk (sorry, we don't do skim)
Method
Preheat your oven to 180 degree Celcius.
As we do not want to grease any pan, we use baking paper to line the pan.
Mix all the dry ingredient together.
In another bowl, mix the wet ingredient - the eggs, oil and milk.
Create a "crater" in the middle of the dry ingredient and slowly pour in the liquid mixture. Pour in slowly while mixing with your hand to get a soft, but not sticky mixture. DO NOT POUR ALL THE WET INGREDIENT IN AT THE SAME TIME.

Now, roll a small ball of the soft mixture and flatten them on the pan. Size is your preference. We like our cookies big and chunky. We had ours sized about 2-inch diameter and about 1/2 inch thick
Bake the cookies for about 10-12 minutes. Remove them and let them cool immediately after 12 minutes. If you like your cookies chewy, do not leave it in the heat too long.

Based on the ingredient used above, I estimated the whole batch of cookies will work out to be about 2000kcal (Flour - 450kcal, oil - 750kcal, rolled oats - 450kcal, egg - 80, cranberries - 150kcal). Divide that by 15 large piece it average out to about 133kcal and that is easily 70kcal less compared to the more commercially available Famous (;-)) large cookies (40grams each). The recipe actually allows for up to 25 pieces of average piece (80kcal/piece). As this was the first time we did this, the next batch will see reduction of oil used and possibility without any sugar (this 1/5 cup actually yield an almost bland tasting cookies, but it's OK for us).

    1. This was made in surprise. Suddenly it just appeared before it goes into the oven. That is why the photo is from the tray and out of the over (and into the mouth) only.
